Herbed baked fish
Ingredients
- 4 small chillies - deseeded
- 3 cloves of garlic
- 1 cup coriander stems & leaves
- 1 Tbsp ground coriander
- 1 Tbsp ground cumin
- salt to taste
- 1/4 cup olive oil
- 2 Tbsp white wine vinegar
- 4 slices sesame bread (thick slices cut from a cob are good)
- 4 thick pieces fish (blue eye, snapper, barra - any fish will do)
Directions
- Preheat oven to 200 degrees
- Sprinkle bread with extra olive oil on both sides
- Place thin slices of garlic on the top of the bread and bake until starts to brown
- Place chilli, garlic, salt, coriander, cumin, ground coriander, oil and vinegar in food processor - process until smooth
- When bread browned - remove from oven - place fish on top - coat with herb mixture and bake for approx 6 mins
- Serve with garden salad
