Herbed baked fish

Ingredients

  • 4 small chillies - deseeded
  • 3 cloves of garlic
  • 1 cup coriander stems & leaves
  • 1 Tbsp ground coriander
  • 1 Tbsp ground cumin
  • salt to taste
  • 1/4 cup olive oil
  • 2 Tbsp white wine vinegar
  • 4 slices sesame bread (thick slices cut from a cob are good)
  • 4 thick pieces fish (blue eye, snapper, barra - any fish will do)

 

Directions

  1. Preheat oven to 200 degrees
  2. Sprinkle bread with extra olive oil on both sides
  3. Place thin slices of garlic on the top of the bread and bake until starts to brown
  4. Place chilli, garlic, salt, coriander, cumin, ground coriander, oil and vinegar in food processor - process until smooth
  5. When bread browned - remove from oven - place fish on top - coat with herb mixture and bake for approx 6 mins
  6. Serve with garden salad
