Prawn Salsa
Ingredients
- 1 tbsp Oil
- 12 Prawn cutlets - deveined (or raw prawn meat)
- Large clove of garlic - crushed
- Salsa -
- 1 mango diced
- Small bunch of fresh coriander
- 1 tablespoon brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
Directions
- Dice mango and chop coriander - mix together and place on 2 serving plates
- Mix brown sugar, fish sauce, lime juice together
- Pour oil and crushed garlic over prawns - stir together then tip into frying pan on medium heat.
- Toss prawns in pan until just cooked (do not over cook) - flesh turns white
- Serve half on each plate of mango - pour over sugar, fish sauce and lime juice mixture
- Enjoy
