Prawn Salsa

Ingredients

  • 1 tbsp Oil
  • 12 Prawn cutlets - deveined (or raw prawn meat)
  • Large clove of garlic - crushed
  • Salsa -
  • 1 mango diced
  • Small bunch of fresh coriander
  • 1 tablespoon brown sugar
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice

Directions

  1. Dice mango and chop coriander - mix together and place on 2 serving plates
  2. Mix brown sugar, fish sauce, lime juice together
  3. Pour oil and crushed garlic over prawns - stir together then tip into frying pan on medium heat.
  4. Toss prawns in pan until just cooked (do not over cook) - flesh turns white
  5. Serve half on each plate of mango - pour over sugar, fish sauce and lime juice mixture
  6. Enjoy
